Herring Gundy

3 lbs. smoke herring

1 large onion

1 small piece hot pepper minced

2/3 cup of salad oil

1 cup grated carrots

1 spring parsley

1 & 1/2 lbs. potatoes cooked

1 green & red sweet peppers

1/2 cup of olives & capers

1/4 cup vinegar

1 cup beets

3 boiled eggs, cut up

 

Banana Fritters

 

1 cup of mashed banana

1 & 1/2 cups of flour

3/4 cup of milk

2 tsp. vanilla essence

1 cup cooking oil

1 tbls. baking powder

3/4 cup sugar

1 tsp. salt

1 egg

1/4 cup of water
